Chocolate tiramisu

Chocolate tiramisu

Ingredients: 

- 2 large eggs
- 75g sugar
- 450g mascarpone
- 300ml cream
- A few drops of fresh lemon juice
- 160ml strong brewed coffee
- 100ml water
- 60ml amaretto (optional)
- About 32 sponge fingers
- Knoops 54% Dark chocolate flakes

Instructions:

  1. Separate the whites and yolks of 2 eggs into separate bowls
  2. Add 75g of sugar to the egg yolks and whisk until slightly lighter in colour. Add 450g of mascarpone and whisk slowly to combine, then add 300ml of cream and slowly whisk to soft peaks.
  3. To the egg whites, add a few drops of fresh lemon juice then whisk until fluffy. Add to the egg yolk mixture and gently fold to combine.
  4. In a dish, combine 160ml of strong brewed coffee with 100ml of water. Optionally, add 60ml of amaretto.
  5. Add a thin layer of the mascarpone mixture and chocolate flakes into the bottom of a dish, then a layer of sponge fingers that have been briefly dipped into the coffee mixture. Repeat these layers, then finish with a final layer of mascarpone cream and chocolate flakes on top.
  6. Cover and chill in the fridge for at least 3 hours before serving for the best results.
